Jayson is Pahlmeyer's second label, born from founder Jayson Pahlmeyer's obsession with big, structured Napa reds. This Cabernet Sauvignon blends mountain fruit with valley-floor grapes from Rutherford and the foothills of Atlas Peak, harvested at night and hand-sorted before resting about 15 months in mostly new French oak. Expect blackberry, red currant, and forest-floor earthiness giving way to plum and toasted hazelnut on the finish. Pour it alongside a seared ribeye or aged cheddar.
