Overview

Junmai daiginjo built by Richard Geoffroy, who ran Dom Pérignon for nearly three decades, at the Shiraiwa brewery in Toyama. It is blended rather than bottled as a single brew — different rices and yeasts assembled into one house style, which is why each release is numbered by assemblage. Full and savoury; serve it at cellar temperature in a wine glass.
