Iona's vineyard workers gave Sauvignon Blanc a nickname they could actually pronounce — "Sophie te'Blanche" — and it stuck as the name for this Elgin and Cape South Coast bottling. Grown on a biodynamic, goose-patrolled estate 420m above sea level overlooking the Atlantic, the grapes get an unusually long, cool ripening season, hand harvest, overnight settling, and four months on the lees before bottling. Expect cut green apple, gooseberry, and zesty lime with a mineral streak, at 13% ABV. Pour it chilled with oysters or a bright green salad.
