Insólito's Añejo comes out of Mexico's highest-altitude distillery, 7,200 feet up in Jalisco, where the cooler climate shapes the whole production process. A blend of highland and lowland blue agave rests 18 to 24 months in new American oak, picking up notes of chocolate, toasted nuts, and dried fruit alongside a whisper of cinnamon.
