Baijiu is one of China's defining spirits, and HKB is built as an easy way in. It starts in Sichuan, where five grains—sorghum, rice, sticky rice, corn, and wheat—ferment in traditional mud pits before a first distillation done the old way. Then it heads to Italy, where a grappa maker blends and rests it two years. At 43% ABV, expect a delicate nose of red fruit, green apple, and meadow grass, gentle sweetness on the palate, and a long, fragrant finish. Serve it neat, chilled, or mixed.
