The Hirsch Cask Strength Cognac Finished Bourbon is created by first blending together 54 barrels of their 13% rye mash bourbon that have been aged for at least 6 years. That blend is the dumped into 30-year-old Hine XO cognac barrels and allowed to finish in a KY rick house for a year and a half. It’s then dumped, blended and bottled without cutting.
Tasting notes
On the nose, it offers notes of dusty cherry and charred citrus with a palate of over ripe stone fruit, fresh raisin, soft heat, and finishes dry yet flavors continue to develop.
