From Taiyo Shuzo, a Niigata brewery pouring since 1635, Hiro Red is junmai sake made the pure way: just rice, water, koji, and yeast. Local Gohyakumangoku rice is polished to 60 percent before brewing, giving it an earthy, savory character with quiet fruit and floral notes and a whisper of sweetness. Bottled at 15 percent ABV, it's traditionally enjoyed warm or lightly chilled alongside sushi, tempura, or a steaming bowl of ramen. A layered introduction to Japanese rice brewing.
