Most VSOP cognac asks you to sip slow and think hard. H by Hine was built to go the other way — Hine's cellar master worked with the French Bartenders Association to blend roughly 20 eaux-de-vie from Grande and Petite Champagne, aged a minimum of four years, into something loose enough for a shaker. Expect jasmine and iris up front, then fresh apricot and a whisper of white pepper on the palate. Bottled at 80 proof. Pour it over ice with tonic, or shake it into a cocktail.
