Hillrock is a working farm in New York's Hudson Valley that floor-malts its own estate-grown rye and barley on site — a practice that vanished from the region after Prohibition. This bourbon takes it further: aged through a solera system borrowed from sherry and cognac houses, then bottled undiluted at cask strength. Expect vanilla, fig, and dried date on the nose, cinnamon, caramel, and bitter chocolate on the palate, and a long finish of praline pecan and black cherry. Pour it neat and let it open up.
Tasting notes
Nose: Vanilla, banana, figs, raisins, apricots, dates, cherry, and a pinch of baking spice.
Palate: Raisins, dates, dried cherry, cinnamon, caramel, bitter chocolate, and oak.
Finish: Praline pecans, cinnamon toffee, black cherries, dried apricots, and a hint of espresso.
