Highland Park doesn't add a drop of water to this one — it's bottled straight from the cask at a hefty 64.7% ABV. Release No. 5 spends its time mostly in first-fill sherry-seasoned European oak, including Pedro Ximénez casks, with a supporting cast of refill ex-bourbon barrels. Expect dried dates and prunes, warm baking spice, and a whisper of Orkney's heathered peat smoke curling through the finish. Pour it neat, or add a few drops of water yourself to open it up.
Tasting notes
Highland malts capture the true spirit of Scotland; the moorlands, it has an aroma of heather, fresh pine forests and vanilla. The palate is rounded, firm, and fruity with a medium body and smooth lengthy finish.
