Highland Park's distillery sits farther north than any other in Scotland, on Orkney, where the peat is cut from heather and sphagnum moss instead of the usual moorland — giving this 21 Year Old its own smoky signature. The 2023 release married ex-bourbon hogsheads with sherry-seasoned European and American oak and ex-Rioja casks laid down between 1998 and 2001, yielding tropical fruit, toasted almond, nutmeg, and a whisper of floral peat smoke. Bottled at 46% ABV. Pour it neat, in a wide glass, and let it open up.
