High Wire Distilling built this bourbon around a corn variety that nearly vanished. Jimmy Red, a magenta-hued landrace corn once grown on James Island, was down to a handful of seeds before the Charleston distillery spent years working with farmers to bring it back. That heirloom grain gives the bourbon a rounded, almost creamy backbone, aged a minimum of four years in char 3.5 American oak and layered with graham, cinnamon, and maple. Pour it neat to let the corn character lead.
