Hevron Heights Redemption is a Cabernet Sauvignon-led red blend (with Merlot and Syrah) from Hevron Heights Winery, based in Kiryat Arba in Israel's Judean Hills. The grapes are grown on an organic hillside vineyard overlooking the Dead Sea at roughly 750 meters elevation, then the wine spends 24 months in French oak. Expect spiced, vanilla-edged aromas over a palate of ripe plum and dark cherry, backed by fine, structured tannins. Decant before serving and pair with grilled lamb, brisket, or aged hard cheeses.
