Maison Hérout has coaxed cider from Normandy's Cotentin orchards since 1946, organic since the 1970s. Micro Cuvée No. 3 skips the usual cider playbook: six months resting in old Chardonnay and Pinot Noir barrels, then 20 months aging on lees before disgorgement, with no added gas. It pours pale gold with fine, persistent bubbles, pear and faint oak on the nose, and a wine-like structure — tannic, bitter, acidic on the finish.
