In Normandy's Cotentin peninsula, Maison Hérout has been making cider the traditional way since 1946 — organic orchards, unpasteurized juice, and natural carbonation created right in the bottle using the old méthode ancestrale. This 2020 Cuvée Tradition pours a bright gold with frothy bubbles, showing aromas of just-picked apple alongside an earthy, mineral edge and a light tannic grip.
