This isn't your usual bubbly — it's a cider from Maison Hérout, a family cidery farming Normandy's Cotentin coast organically since the 1970s. Grande Cuvée blends over 25 local apple varieties, pressed on a 1920s rack press, then fermented with wild yeasts in old Chardonnay and Pinot Noir barrels before resting roughly 20 months in bottle for its natural fizz. Extra brut means barely any sweetness — expect pale gold color, fresh pear, and a whisper of oak. Serve well-chilled alongside soft cheese or grilled seafood.
