Henri Bardouin builds its recipe from more than 65 plants and spices, gathered around the Mourres plateau above Forcalquier in Haute-Provence and pot-still distilled into something layered. Thyme, rosemary, sage, star anise, licorice, cinnamon and cardamom all get a say, so the anise opens into a warm, peppery depth.
