Heavensake Junmai Ginjo comes from an unlikely pairing: Dewazakura, a brewery working the snowy valleys of Yamagata since 1892, and Régis Camus, the French cellar master who's picked up IWC Winemaker of the Year eight times over in Champagne. He applies assemblage — blending for balance, the way you'd build a cuvée — to sake instead of wine. The result is aromatic and clean, pear and apple up front with a touch of green apple and mint, silky through the finish. Serve chilled in a wine glass.
