Here's where champagne meets sake: HEAVENSAKE is the brainchild of French cellar master Régis Camus, who brings blending know-how to Japan's Dewazakura brewery in Yamagata. This Junmai Ginjo (Label Azur) polishes its rice to 50%, landing bright and clean at 15% ABV. Expect green apple and fresh mint on the nose, then pear, grape, and a whisper of spearmint across a silky, gently dry palate.
