Overview

Old Tom is the almost-forgotten style that ruled 18th-century English gin before London Dry took over—sweeter, rounder, built for classic cocktails. Hayman's found an 1860s family recipe in their archives and relaunched it in 2007, distilling with the same ten botanicals as their other gins but in greater intensity, plus a touch of sugar. The result comes out juniper-led, piney and citrus-bright, with earthy spice on the finish. Shake it into a Tom Collins or stir it into a Martinez.
