There's a reason Châteauneuf-du-Pape tastes like sunshine: the vineyards are paved with fist-sized quartz stones that soak up heat all day and feed it back to the vines at night. Delas Frères has worked this Rhône ground since 1835, building Haute Pierre mostly from Grenache with a splash of Syrah, fermented in concrete and rested in big oak tuns. Expect a deep, spicy pour with a licorice-tinged finish. Serve it alongside braised or grilled meats and a slow Provençal stew.
