Ed Hamilton built this Jamaican pot still rum around one idea: the perfect daiquiri. Distilled at Worthy Park and bottled by his Ministry of Rum, it's aged in ex-St. Lucian casks, then married with a younger Worthy Park light rum for a bright, blonde profile with no sugar or caramel added. Expect approachable Jamaican character rather than full-on funk: pineapple rind, ripe banana, and star fruit, with soft vanilla. Bottled at 45% ABV. Shake it into a daiquiri or sip it neat.
