"Soaring Clouds" is the literal translation of Sho-Une — a fitting name for Hakutsuru's flagship Junmai Daiginjo out of Hyogo's Nada district, brewed with Yamada Nishiki rice polished down to 50% and spring water drawn from Mount Rokko. Expect fruity aromas, a velvety texture, and a soft pear note that lingers into a medium-bodied, gently sweet finish. It picked up a gold medal at the 2019 World Sake Challenge. Serve it chilled alongside something rich and salty — aged cheese is a natural match.
