From the high desert of Chihuahua, this añejo sotol is distilled from 100% wild-harvested Dasylirion — the desert spoon plant, cousin to agave but entirely its own spirit. Triple-distilled in copper and fermented with champagne yeast, it rests two years in French oak, taking on vanilla and dried fruit that soften the plant's herbal backbone.
