Bittuni is an indigenous Levantine grape revived after a gap of centuries, partly through research by Gvaot's own winemaker at Ariel University. This is 100% Bittuni from goblet-trained bush vines at 900m, dry-farmed without irrigation, then 12 months in French oak.
