Gran Dovejo's Reposado comes out of the Jalisco highlands, where blue agave grown in iron-rich soil gets slow-cooked in brick ovens before a double distillation through copper alembic stills. Resting roughly nine months in used bourbon barrels brings out cooked agave, vanilla, and baking spice up front, with butterscotch, toasted oak, and a whisper of smoke trailing into a long, warm finish. Sip it slow, neat or over one big rock, and let the spice unfold.
