Made from 100% malted barley grown across Colorado and neighboring states, then malted in-house in Golden, Principium is a Rocky Mountain take on single malt. Double-distilled and aged in charred American oak, it pours amber with a warm, malty nose — think banana bread, apple, and a whisper of clove. The palate leans into caramel and maple with a cinnamon-spiced, oaky finish. It earned Gold at the 2019 San Francisco World Spirits Competition. Pour it neat and let it open.

"Tonight’s dram takes me (virtually) back west of Denver to the Lakota Hills in Colorado to the Golden Moon distillery for the Principium Single Malt. It opens with caramel, vanilla, yellow apples, pears, and white grapes, followed by banana bread, a hint of clove, white syrup, and a whiff of smoke, finally settling with raw oak and a dash of black pepper. It is interesting that smoke is present, but not charred oak – only raw oak. This is the liquid version of a cup of smoked fruit-cocktail with a side of banana bread. I can’t say I would recommend it. Drink slow, drink long, drink a variety, drink often."
