Fuego y Humo means "fire and smoke," and this espadin joven earns the name. Made by Jose Manuel Mendez in San Dionisio Ocotepec, Oaxaca, from 100% maguey espadin roasted in an earthen pit, crushed by horse-drawn tahona, fermented with wild yeast in pine, and twice distilled in copper. At 47% ABV it's soft yet lively: caramel and cream up front, gentle smoke, then berries, orange zest, and a surprising cream-soda lilt. Pour it neat in a copita and sip slow.
