Fósforo's Tobalá Penca begins in San Nicolás Huajuapan, Puebla, where mezcalero Aarón Alva Sánchez cooks wild Tobalá agave in underground earthen pits for five to eight days, then lets it ferment in the open air before a slow double distillation in copper stills. The spirit rests one to three months in glass vessels alongside a cooked agave penca leaf, emerging brilliant amber with layers of leather, caramel, and spice against white flowers and lemongrass. Bottled at 86 proof, it's built for a slow neat pour after dinner, once the smoke settles into something floral.
