Firme's Joven Ensamble pairs two agaves grown in Santiago Matatlán, Oaxaca: nine-year Espadín and wild Tobalá aged up to fifteen. Both are cooked in earthen pits, crushed by horse-drawn tahona, fermented in open wooden vats, then double-distilled in copper. The result is a joven mezcal built on layered smoke, roasted agave, and citrus, with Tobalá's wild floral edge threading through a spicy finish.
