Six agaves, one bottle: Firme's Joven Ensamble blends Espadín, Tobalá, Barril, Cuishe, Mexicano, and Coyote from a palenque in Santiago Matatlán, Oaxaca. The agave hearts are pit-roasted in a stone underground oven, crushed by horse-drawn tahona, then double-distilled in copper stills at 45% ABV. Expect herbaceous citrus, roasted agave, black pepper, and a long, refined smoke on the finish.
