Distilled at the RUM Co. of Fiji from local sugarcane grown in volcanic soil, this rum begins its life on a South Pacific island before crossing the ocean to France. Two to three years in ex-bourbon casks build a tropical base of ripe fruit and coconut, then a final year resting in Maison Ferrand's Cognac casks layers in vanilla, ginger, and fudge-like warmth. The finish runs long, spiced, and faintly bourbon-sweet. Pour it neat to follow the journey, or let it anchor a tiki-style cocktail.
