Fidencio Clásico is old-school mezcal, made the hard way in Santiago Matatlán, Oaxaca. Fourth-generation maestro Enrique Jiménez roasts 100% Espadín agave in an earthen pit over volcanic rock and black oak, mills it with a tahona, then wild-ferments in pine vats before two passes through copper alembic stills. Bottled at batch proof (47-49% ABV), it pours with wood smoke, green pepper, and dried tobacco on the nose, opening into red apple, pine, and roasted agave. Sip it neat to let that smoky depth unfold.
