Exiliado's Madrecuishe comes from wild agave that spends up to twelve years in the hills before it's ready — a patience that shows. Mezcalero Temo García, working the traditions passed down in San Dionisio Ocotepec, Oaxaca, roasts the hearts over volcanic rock, crushes them by stone, and ferments in pine before a double copper-pot distillation. The result is mineral-driven, with vegetal and floral notes layered underneath. Pour it neat in a small copita and let it breathe.
