Espadín agave is roasted roughly a week in a stone-lined pit, crushed by horse-drawn tahona, then fermented with wild yeast in pine vats before two copper-pot distillations. The result: a gentle smoke on the nose giving way to caramel, red apple, and coffee across a medium body.
