Sip Something New with El Buho's flagship Espadín, hand-crafted in Santiago Matatlán, Oaxaca by the Jimenez Mendez family's fifth generation of mezcaleros. Espadín agave is roasted roughly a week in a stone-lined pit, crushed by horse-drawn tahona, then fermented with wild yeast in pine vats before two copper-pot distillations. The result: a gentle smoke on the nose giving way to caramel, red apple, and coffee across a medium body. Pour it neat to explore the smoke, or shake it into a smoky margarita for a night in with friends.
