Jabali (Agave convallis) is the hardest agave to work with, foaming relentlessly at every stage and yielding far less than espadin. Maestro mezcalero Silverio Garcia Luis distills it in Oaxaca the ancestral way, in clay pots with a hollowed agave quiote serving as the condensing tube. Production is tiny by necessity.
