A mezcal built on defiance: Erstwhile's Jabalí Ancestral comes from Rancho Blanco Güilá, Oaxaca, where mezcaleros Silverio García Luis and Epifania Gómez Mejía coax wild, saponin-heavy Jabalí agave into spirit through natural fermentation in pine tanks and a clay pot still fitted with a hollowed agave quiote—a technique Silverio's father once used to hide production from authorities. Only 100 liters emerged, bottled at 49% ABV, earthy and herbal with an untamed character best savored slowly, neat, one sip at a time.
