Sotol steps outside agave country entirely: cucharillo is wild Dasylirion, hand-harvested in Oaxaca's southern highlands and distilled by Miahuatlán's nine-generation Lucas García family. This 2021 limited release ferments in cypress-wood tanks before a copper-still pass, bottling at 48% ABV with a bright, herbaceous character — oregano, lemon balm, and mountain mint give way to a silky, mineral-tinged finish. Sip it neat in a copita to taste the highlands, or let it anchor a citrus-forward cocktail for something genuinely new.
