Elvi Wines' Viña Encina Tinto is a 100% Tempranillo red from Ribera del Júcar in Spain's Castilla-La Mancha region, made by the Elvi Wines family winery. The grapes go through cold pre-fermentation maceration for maximum color extraction, then ferment at a controlled 19°C for about ten days before an additional week of maceration to build structure. The result is a bright cherry-red wine with juicy blackberry and cherry fruit, a touch of spice, and soft, easy-drinking tannins. Serve alongside grilled meats or a hearty tomato-based pasta.
