Maestro mezcalero Rey David Castro, third generation in his family, makes it in Axaxacualco: agave roasted in an earthen pit lined with river stones, fermented in wooden vats, then double-distilled in copper. The result is green and woody, with a mineral edge and a soft, buttery finish. Pour it neat, or build a smoky mezcal margarita around it.
