Twenty-five barrels, hand-picked from the distillery's oldest stock to mark a quarter-century milestone — that's the whole idea behind this one. El Mayor's 100% Blue Weber agave, grown in Jalisco, spends 39 months resting in American oak bourbon barrels at Destiladora Gonzalez Lux in Arandas. Expect vanilla, agave, and a hint of tangerine and nutmeg on the nose, then honey, dried fruit, and pepper on the finish. Sip it slow, neat, in a rocks glass.
