Tobalá is the wild one — a small, oak-shade agave that takes over a decade to mature and makes up just a sliver of what grows in Oaxaca, which is exactly why it fascinates. El Jolgorio's version comes from mezcalero Gregorio Martínez Jarquín in Santiago Matatlán, made the old way: pit-roasted piñas crushed under a mule-drawn tahona, open-fermented and twice-distilled. Expect ripe tropical fruit, pineapple, and honeyed sweetness over a soft, viscous body with barely a wisp of smoke. Sip it neat, slowly.
