Sip Something New with a mezcal built around a maguey most brands won't touch: wild Cuixe agave, prized for its density and difficulty to work. El Jolgorio's Oaxacan mezcaleros pit-roast the piñas, crush them by mule-drawn tahona, and double-distill in small copper pots at 94 proof. The result pours earthy — think wet clay — with a spicy backbone and a smooth curl of smoke and minerality on the finish. Pour neat and slow for sipping, not mixing.
