El Camino del Pensador's Joven Espadín is a single-village snapshot of Miahuatlán, Oaxaca, made by mezcalero Onofre Ortiz from roughly 8-year-old Espadín agave. It's roasted in an underground oven, crushed by tahona, naturally fermented, and twice-distilled in a copper still. Expect aromas of buttered barbecued corn and earthy ancho chili, then a palate of rosemary, chamomile, honeyed sweetness and chewy tobacco smoke. Sip it neat alongside a cold lager and salty snacks, or build it into a Paloma, Margarita or Negroni.
