Pensador's Ensamble blends roughly 70% Espadin with 30% Madrecuishe agave, grown in the hills of Miahuatlan in southern Oaxaca and made by maestro Don Atenogenes Garcia. The pinas cook underground, get crushed by a horse-drawn tahona, ferment with well water, then double-distill in copper to a lively 48% ABV. Expect roasted apricot, cacao, and grapefruit zest with a whisper of salinity. Sip it neat, or let it carry a smoky cocktail.
