Most mezcal comes from espadin, but this one leans into agave atrovirens, the towering maguey more often tapped for pulque, which is exactly where the Pulquero name comes from. Mezcalero Octavio Jimenez crushes it under a horse-drawn tahona in Santiago Matatlan, roasts it five days in a stone pit, and ferments in open pine. The result is chalky and mineral, with green fruit, sea salt, and a dry, citric finish. Bottled at 48%. Pour it neat and let it open.
