El Buho takes its Espadin through three copper-still distillations, tossing ripe mango criollo into the final one, pechuga-style but without any protein. The fruit's sugars caramelize instead of fermenting, so you get an overwhelming nose of ripe mango over smooth agave, with green apple on the palate and cooked agave and green pepper on the finish.
