Four wild magueys, Arroqueño, Coyote, Barril, and Cuishe, come together in this special ensamble from El Buho, a brand made by the Jimenez Mendez family, fifth-generation mezcaleros in Oaxaca. The agaves are gathered near San Pablo Huixtepec, and the result is layered: banana on the nose, then pineapple, roasted agave, and vanilla folding into dark caramel and a pepper-salt finish. Bottled at a bold 50% ABV, it's one to pour neat in a copita and sip slowly.
