D'Ussé XO ages inside Château de Cognac, a historic fortress on the Charente River where King François I was born — and its eaux-de-vie split time between humid and dry cellars, a dual-cellar aging process that shapes oxidation differently on each side. Distilled on the lees from Ugni Blanc, Folle Blanche, and Colombard grapes, this XO spends a minimum of ten years in oak before blending. Expect ripe blackberry and apricot up front, then dark chocolate, walnut, and warm spice. Pour it neat, or over one large cube.
