Derrumbes' Oaxaca expression comes from the hands of third-generation farmer Maestro Javier Mateo and his family in Santiago Matatlán, blending two parts Espadín to one part wild Tobalá agave. The hearts are pit-roasted over black oak, tahona-ground, and wild-fermented with a touch of pulque and spring water carried from the Zapotec town of Mitla. Unaged and joven in style, it pours round and full-bodied, with light smoke giving way to mineral edges, jasmine, citrus, and acacia honey. Serve neat in a copita to let each layer unfold.
